Recipe of the Week: Shrimp Lettuce Wraps

Serves: 4, Serving Size: 3 lettuce wraps

Ingredients:

1cup uncooked brown rice

1 pound cooked shrimp

1 Tbs. reduced-sodium soy sauce

2 Tbs. lime juice

3 cloves garlic, minced

1 cup shredded carrots

1 cup fresh cilantro

1 cup fresh mint leaves

12 Boston lettuce leaves

Directions:

Cook brown rice. Chop shrimp. In bowl, mix soy sauce, lime juice and garlic with shrimp. Let marinate about 20 minutes. In lettuce leaves, divide rice and shrimp mixture. Top with desired amount of carrots, cilantro and mint leaves.
